Cashew Capsicum Curry

Cashews are an all time favourite but have you ever wanted to put them in a curry with spicy fried capsicum? You should!

What do we need?

Cashews- 1 small cup fried in ghee, capsicum -2 chopped, tomatoes -2 chopped finely, cauliflower – small half floret chopped finely and boiled 9r cooked, onions – 2 finely chopped, potato – 1 boiled/cooked and diced into small pieces, salt to taste, green chillies – 2 chopped finely, turmeric – a pinch, chilli powder as needed, cumin seeds – small spoonful, mustard seeds – small spoonful, oil to fry.

How to prepare it?

In a frying pan, pour a little oil and add cumin seeds, mustard seeds, chopped chillies, onions and sauté till brown. Then add the potatoes, cauliflower,the capsicum and stir till the capsicum is cooked. At the end add the tomatoes , cashews salt , chilli powder, turmeric and mix well.

Serve with butter roti and curd on the side.
