Onion Kheer

What do we need?

4 onions – peeled and chopped finely, 2 litres of milk, corn flour, sugar for sweetening, dry fruits like cashews, almonds & pistachios chopped finely, sewai  (vermicelli) 1/2 packet.

How do we prepare it?

Rub the onions in corn flour roughly 2 to 3 tines.  Boil water and immerse them in it for 10 minutes. Then remove and quickly plunge them in ice cold water. (Tip: This process is called blanching)

Boil the milk and add the onions into it. Once the onions soften, add sugar and continue to boil.

As the milk begins to thicken, add the sewai and stir to soften it quickly. At this time add all your chopped dry fruits and remove from heat.

Garnish with cashews, almonds and pistachios and serve chilled.
