Okra Raita

What do we need?

Okra – 250 gm finely chopped up, yogurt – 2 cups, red chilli powder, pepper powder, cumin powder,salt to taste, green chillies – 2 chopped finely, tomatoes -2 finely chopped, cucumber -2 chopped finely.

How to prepare it?

Clean and chop the okra into fine little pieces. In a non stick pan, add a bit of oil and fry the okra pieces till they soften. Do not add too much oil. Once the okra are fried to a crispy texture, add red chilli powder, salt, pepper powder, cumin powder, turmeric and mix well. Remove from stove & use a tissue paper to soak away any extra oil from the pieces. Now in a separate pan, add a little oil and cumin seeds, mustard seeds and let it crackle. Then add the tomatoes and let it cook well. Remove from stove.

In a bowl, take yogurt and add a bit of salt to it. Add your finely chopped green chillies to it . Mix well after adding a pinch of turmeric. To this mixture, add the fried crispy okra and mix well. In 5he end add the cooked mixture of tomatoes. Garnish with coriander!

Serve with dal, roti or paratha for maximum effect!
